Homemade Vegetable Soup

For the young girls, just starting out with their own home, working with a budget, here's an old timers kitchen secret.

Find a plastic container that you can keep in the freezer. Every time you find yourself with vegetable leftovers, through those leftovers in that container. This way, you don't have to throw away even a teaspoon full of green beans.

Store leftover:greenbeans,corn,potatoes,tomatoes,peppers,carrots. No spinach,lettuce,any wilty things.

When the container is chocked full, you can throw the whole frozen lump into a large pot. Add a can of tomatoes:whole,stewed,chopped,whatever. Add some left over meat if you like, chopped up. Add some fresh celery,carrots, onions, some more potatoes and add water to the top, completely covering your veggies and then some. Salt and pepper.

Let it simmer for a couple hours. 20 minutes before dinner time, throw in a handfull of rice or elbow noodles.

It's a great, nourishing vegetable soup.
